Springtime Pasta Primavera

When the weather starts getting warmer and the days start getting longer, I get a craving for fresh and vibrant meals. That’s why I love making Springtime Veggie Pasta Primavera. It’s easy, healthy, and bursting with flavor.

To get started, you’ll need:

– 1lb pasta
– 2 tablespoons olive oil
– 1 red onion, chopped
– 3 cloves garlic, minced
– 1 pint cherry tomatoes, halved
– 1 zucchini, sliced
– 1 yellow squash, sliced
– 1 bell pepper, sliced
– 1 bunch asparagus, trimmed
– salt and pepper, to taste
– parmesan cheese, grated

1. Cook the pasta according to package instructions.
2. In a large pan, heat the olive oil over medium heat.
3. Add the onion and garlic and sauté until translucent.
4. Add the cherry tomatoes, zucchini, squash, bell pepper, and asparagus to the pan and cook until tender.
5. Season with salt and pepper to taste.
6. Drain the pasta and add it to the pan with the veggies.
7. Toss everything together and top with grated parmesan cheese.

As if that wasn’t enough, I found another Spring Pasta Recipe that I just had to try. It’s called Pasta Primavera with Green Pea Pesto, and it’s a beautiful twist on the classic dish.

For this recipe, you’ll need:

– 1lb pasta
– 2 cups frozen peas, thawed
– 1/2 cup fresh basil leaves
– 1/2 cup fresh mint leaves
– 2 cloves garlic, minced
– 1/2 cup grated parmesan cheese
– juice of 1 lemon
– 1/2 cup olive oil
– salt and pepper, to taste

1. Cook the pasta according to package instructions.
2. While the pasta is cooking, make the green pea pesto. In a food processor, combine the peas, basil, mint, garlic, parmesan cheese, lemon juice, and olive oil. Pulse until smooth.
3. Drain the pasta and toss it with the green pea pesto.
4. Season with salt and pepper to taste.

I love how the sweetness of the peas and the freshness of the herbs come together to create a vibrant and flavorful dish. Plus, the bright green color is just gorgeous.

Both of these Springtime Pasta recipes are perfect for a light and healthy dinner, or for meal prep to take to work throughout the week. They’re also a great way to get in some extra veggies and enjoy the fresh flavors of the season.
