Spring is the season for fresh, green vegetables and what better way to enjoy them than on a delicious pizza! We have two amazing pizza recipes to share with you today, both packed with nutritious veggies that will leave you feeling energized and satisfied.

First up is our Spring Veggie Pizza Appetizer. This pizza is perfect for entertaining guests or as a light lunch. The combination of crisp bell peppers, juicy cherry tomatoes and vibrant asparagus make this pizza as beautiful as it is delicious. The recipe is easy to follow and can be ready in just under 30 minutes!

To start, preheat your oven to 425°F. Roll out your pizza dough and place it on a baking sheet lined with parchment paper. Begin by brushing the dough with olive oil and sprinkle with salt and pepper.

Next, it’s time to add the veggies! Layer the bell peppers, cherry tomatoes and asparagus on top of the pizza crust. We like to chop the veggies into bite-sized pieces for easier eating. Top with crumbled feta cheese and a sprinkle of Italian seasoning.

Pop your pizza in the oven and bake for around 15 minutes, or until the crust is golden brown and the veggies are tender. Slice and serve immediately, garnished with fresh basil leaves.

For our second recipe, we have a Spelt Spring Veggie Pizza. Spelt flour is a wonderful alternative to regular wheat flour as it is higher in protein and nutrients. This pizza is loaded with spring veggies like sweet peas, artichokes and leeks, making it both nutrient-dense and delicious.

Preheat your oven to 450°F. In a bowl, mix together your spelt flour, yeast, water, olive oil, salt, and honey until the dough forms. Knead the dough for a few minutes before rolling it out to a thin crust and placing it on a baking sheet lined with parchment paper.

Now it’s time to add the veggies! Spread a thin layer of pesto over the pizza crust and layer the sweet peas, artichokes, leeks and spinach on top. Sprinkle with crumbled goat cheese and pine nuts.

Bake in the oven for around 15 minutes, or until the crust is golden brown and the cheese is melted and bubbly. Garnish with fresh parsley and serve immediately.
