To start, gather the following ingredients:
– 1 store-bought pie crust
– 1 cup ricotta cheese
– 1/4 cup grated Parmesan cheese
– 2 tablespoons chopped fresh herbs, such as basil, parsley, or thyme
– 1 small yellow onion, thinly sliced
– 1 small zucchini, thinly sliced
– 1 small yellow squash, thinly sliced
– 1 small red bell pepper, thinly sliced

Preheat your oven to 375°F (190°C). Roll out the pie crust on a lightly floured surface and place it in a 9-inch tart pan with a removable bottom. Trim the edges and prick the bottom with a fork. Bake the crust for 10 minutes, then remove it from the oven and let it cool.
