Spring Vegetable Tart

Spring is the perfect season to try new things and experiment with fresh veggies. Why not try making a delicious Spring Vegetable Tart? This savory dish is sure to impress even the pickiest of eaters, and it’s fairly easy to make.

To start, gather the following ingredients:

– 1 store-bought pie crust
– 1 cup ricotta cheese
– 1/4 cup grated Parmesan cheese
– 2 tablespoons chopped fresh herbs, such as basil, parsley, or thyme
– 1 small yellow onion, thinly sliced
– 1 small zucchini, thinly sliced
– 1 small yellow squash, thinly sliced
– 1 small red bell pepper, thinly sliced
– 1 small orange bell pepper, thinly sliced
– 1/2 cup frozen peas
– 3 tablespoons olive oil
– Salt and freshly ground black pepper to taste

Preheat your oven to 375°F (190°C). Roll out the pie crust on a lightly floured surface and place it in a 9-inch tart pan with a removable bottom. Trim the edges and prick the bottom with a fork. Bake the crust for 10 minutes, then remove it from the oven and let it cool.

While the crust is cooling, heat 2 tablespoons of the olive oil in a large skillet over medium heat. Add the onion and sauté for 3-4 minutes, or until slightly softened. Add the zucchini, squash, red and orange bell peppers, and frozen peas, and sauté for an additional 5-7 minutes, or until the vegetables are tender.

In a small bowl, mix the ricotta cheese, Parmesan cheese, and chopped herbs together. Spread the mixture evenly over the bottom of the cooled tart shell.

Using a slotted spoon or tongs, transfer the sautéed vegetables to the tart shell, arranging them in an even layer. Drizzle the remaining 1 tablespoon of olive oil over the top of the vegetables, and sprinkle with salt and freshly ground black pepper to taste.

Bake the tart for 15-20 minutes, or until the filling is set and the crust is lightly golden. Let it cool for a few minutes before slicing and serving.
