  • 1 1/2 cups shredded cheddar cheese
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons unsalted butter
  • 1/2 cup milk

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Pierce the potatoes with a fork several times and rub them with olive oil. Sprinkle with 1/2 teaspoon of sea salt and black pepper. Place the potatoes on a baking sheet and bake for 50 to 60 minutes, or until tender.
  3. Meanwhile, steam the broccoli until tender, about 5 minutes. Set aside.
  4. Once the potatoes are cooked, remove them from the oven and let them cool for a few minutes. Cut them in half lengthwise and scoop out the flesh, leaving a 1/4-inch thick shell.
